Question:
I want to make guacamole dip for Cinco de Mayo—is there any way I can make it ahead of time and keep it from turning color?
Ingrid's Answer:Yes, just make sure that you put in plenty of lime juice, and when covering, put some extra lime on the top. Even if you make it in a bowl with a lid, put plastic wrap right on the surface of the dip, in contact with the guacamole, completely sealing it. The reason avocados turn brown is due to oxygen, and if you completely cover the surface with plastic you'll prevent it from turning brown on top.
Question:
I am looking for a sweet treat for my mom who is diabetic. Is there anything that I can make or buy?
Ingrid's Answer:Well, for starters, I would probably use a sugar substitute to replace sugar in any recipe. Take some artificially sweetened yogurt, such as peach or banana, and put it in a 9x9 baking dish. Essentially, what you want to make is a granita. You put it on the bottom of the dish and put it in the freezer. Every hour you scrape the surface with the tines of a fork, so you want to create a sort of slushy. Sort of like a sno-cone, except it's yogurt.
Then you're going to make a topping. You can put a dollop of ricotta cheese on top, which you can season with some artificial sugar. And then you can lay some slices of fruit on top if you want, probably strawberries or the lowest-sugar fruit. You can always shave some dark chocolate on top to garnish, also non-sugar. Dove® Brand Dark Chocolate makes a very nice dark chocolate for the shavings. This is a dessert I always suggest to people on a diet.
Remember that plating is important, so you want to either use a martini glass or a stemless bubble glass, or anything pretty with a stem. You can always tie a ribbon around the stem, maybe attach a little note to the ribbon.

Question:
What kind of chocolate should I use for my mole sauce?
Ingrid's Answer:Dove® Brand Dark Chocolate is a good one. You could use any dark chocolate, but I recommend the Dove® Brand Dark Chocolate. I have a shortcut mole recipe, which is on my website and in my book, which will save you several steps. I made it on an episode of this past season's show. It should also be available on foodnetwork.com.
Question:
I would like to make Oreo pops (on a stick). Any ideas?
Ingrid's Answer:Probably the easiest way of doing it is getting some sort of dark chocolate cookie and then you'd want to get some vanilla ice cream. You'll want to take a can of frozen juice, drain the juice, wash the container, and pack it with the ice cream. Now, essentially you have a nice evenly round-shaped tube of ice cream. You should make sure that your dark brown cookies are similar in size to the diameter of the can.
When the ice cream has been frozen in the can, you take one of the lids, push it out through one of the ends, getting out a perfect round piece of ice cream through the other opening, probably 1 to 1-1/2 inches out, and slice it with a knife. Now you have a perfectly round flap of ice cream. So, essentially we're making an ice cream sandwich. Buy some wooden Popsicle sticks, stick it in the middle and seal with the two cookies to make a sandwich. Now wrap each one individually in plastic, and freeze them.

Question:
Do you have suggestions for non-alcoholic drinks for a Cinco de Mayo party?
Ingrid's Answer:Mexicans generally love what they call aguas frescas (fresh waters), which are generally comprised of fruit juices mixed with water. So, you can make a tamarind water type of spritzer, even if you want to mix it with some carbonation. You can do some Jamaica flowers, a typical flower known to Mexico, but that would only be available in specific stores. It's called agua Jamaica. Or horchata, that is made of ground almonds or rice.
Question:
I love how Mexican dishes combine chocolate and spice. What's a good and easy recipe using some of that spicy chocolate?
Ingrid's Answer:Definitely my Shortcut Chicken Mole or a Mexican Hot Chocolate. Or, you can use spicy chocolate to make brownies. Ingrid's Plantains with Mexican Chocolate Sauce is another recipe from BrightIdeas.com.
Question:
My mom has a sweet tooth, but isn't a big chocolate lover. Any ideas for a delicious dessert?
Ingrid's Answer:Yes, there's the Poached Pear Delight at BrightIdeas.com. Just switch out the chocolate, of which there is very little in the recipe, for caramel or cream. Either/or.
Question:
I want to make something special for my mother-in-law who is a vegetarian. Have any ideas for a nice dinner?
Ingrid's Answer:My Arugula, Fennel and Avocado Salad, which is at SimplyDelicioso.com
Question:
What is a good M&M'S recipe for Mother's Day?
Ingrid's Answer:Personally, I think all M&M'S® recipes are great. Here's a good one: the Afternoon Biscotti at BrightIdeas.com. That is so delicious. I actually feel like having one now.
Question:
I love cinnamon and chocolate but don't have too many recipes that incorporate the two, any ideas?
Ingrid's Answer:Ingrid's Plantains with Mexican Chocolate, available at BrightIdeas.com.
Question:
Any recipe ideas for a Mother's Day brunch?
Ingrid's Answer:Frittata Antioquena, yucca buns, creamy fruit salad, and mango Bellinis, all available at SimplyDelicioso.com
Question:
What's an easy meal my husband and kids can make for Mother's Day?
Ingrid's Answer:Either my Chipotle Tamale Pie, which is in my book and on my website, SimplyDelicioso.com, or My Dad's Brandied Shrimp, also in my book and on my website. If making the shrimp dish, serve with white rice and salad. If making the tamale, serve with a very plain green salad. It's sort of a one-dish wonder.
Question:
What kinds of dips can I make other than guacamole that are in the spirit of Cinco de Mayo?
Ingrid's Answer:It could be a black bean dip, a salsa—any type of salsa. I make a fun black bean and mango salsa, which is delicious with chips or tortillas. That recipe is in my book.
Question:
Can you suggest some good ways to use chorizo in a recipe?
Ingrid's Answer:Perhaps in any type of pasta, or in eggs, like scrambled eggs. You can also add it to turkey stuffing, you can mix it into your hamburger meat, or you can add it to any of your meat sauces.
Question:
What can I use as a substitute for refried beans?
Ingrid's Answer:Red pinto beans. You can cook them down with some bacon drippings and some garlic, and perhaps some sort of seasoning. Take some sofrito, mix it into the beans with the bacon drippings and you should be a-OK.
Question:
How can I add a twist to my tacos?
Ingrid's Answer:Add some chorizo. You could perhaps spike your sour cream with a little bit of tequila. You could use some lemon zest. I think right there you'll have plenty of flavors to pick from.
Question:
Do you know of any fun activities for kids that also teaches them about the history of Cinco de Mayo?
Ingrid's Answer:Specific to Cinco de Mayo, there are no related games in Mexico. But something that could be fun and adapted is to do a type of Simon Says game, but instead of calling it Simon, call it Benito Juarez. Benito Juarez was a Zapotec Indian who was born and raised in extreme poverty. With lots of hard work and determination, and love for his country, he became president of Mexico. He defeated the French who had occupied the country for 5 years. The battle of Pueblo is essentially when the Mexicans defeated the French. That's why it's called Cinco de Mayo; it's the date the battle took place. That was in Pueblo, Mexico. So, perhaps you can adapt some of the games you already know with your kids and play a type of Simon Says but with Benito Juarez.
Question:
Our young kids want to make something special for their mom. Do you have any suggestions of things they can do that are fun and creative?
Ingrid's Answer:The Colorful Flower Crafts at BrightIdeas.com using SKITTLES® BRAND Bite Size Candies. They're very cute.
Question:
Since we're having an outdoor party, I won't have access to an oven. Do you have ideas for food that doesn't need to be heated for Cinco de Mayo?
Ingrid's Answer:Guacamole dips, taco salads, bean dip, salsa—to name a few. Decorate with some pepitas (pumpkin seeds)—that immediately gives it a gourmet look. You can toast your pepitas in advance if you want them to be even more fragrant.
Question:
What kind of cake is appropriate for Mother's Day?
Ingrid's Answer:Well, there are Special Message Sunflowers on BrightIdeas.com, or the #1 Mom Cake, also at BrightIdeas.com. Or, my TWIX® Tartufo. The tartufo has Twix in it, which makes it really fun. And the #1 Mom Cake uses M&M'S® Brand Candies. You're still in time to have some My M&M'S® made, in your mom's favorite color. You could put some fun messages on them. They're available at mymms.com
Question:
I want to throw a "Mothers Mother's Day"—a fun get-together with all of my mom friends. Any ideas?
Ingrid's Answer:A spa party. Make some fun oatmeal masks, avocado masks, perhaps bring in either a masseuse or a manicurist. Perhaps you could have fun goodie bags with samples of beauty products and put some Dove® Brand Chocolates in there, too, because women like chocolate. You can make SNICKERS® fruit blintzes, using the recipe at BrightIdeas.com. Perhaps they can all get together to make some Fudgy Flower Blooms (check BrightIdeas.com for the recipe). This can all be done while you're donning your beauty masks. This is always a fun party. Tell all the moms to come in their sweats and flip-flops.
Question:
I'm going to a friend's Cinco de Mayo party. What should I bring as a hostess gift?
Ingrid's Answer:Something like a basket of chili sauce or different Mexican spices. Perhaps you want to stick in a bottle of tequila. Those are always welcome at parties.
Question:
My mother lives in a nursing home, so I want to bring Mother's Day to her. Do you have any ideas on how I can make this fun and exciting for her?
Ingrid's Answer:Put together a bunch of photo albums, gathering as many pictures as you can from other family members. Bring other portable items, such as balloons or flowers. You can both sit and reminisce over those incredible family pictures. Bring either a Polaroid camera with you or a digital, and have someone take a picture of the two of you there that day, which later you can send or bring her framed for her lunch table. You can make her the Tulip Garden Greeting, which is great for a Mother's Day gift. They're made with Twix® Funsize Candy, recipe available at BrightIdeas.com
Question:
My mom lives on the other side of the country but I want to do something special for her. Any thoughts?
Ingrid's Answer:Starting out by taking a pretty box, and decorating it with either family pictures on top or some photocopied old letters; mementos of a lifetime of the family together. I would suggest photocopying everything instead of using the originals, and covering the box completely as if it was wrapping paper. You should look for a really nice, sturdy box so that she could probably later, besides the contents inside it, use it to put jewelry away or scarves, etc.
A good recipe to travel in this box I suggest on BrightIdeas.com we have Afternoon Biscotti. Or Teatime Scones. Both of those recipes would probably travel well. And to keep them nice and dry, add a slice of Wonder bread in the box before you seal it. This will absorb any moisture that could arise from temperature changes in travel, leaving both the biscotti and the scones to remain dry and not lose crispness.

Question:
My daughter just had her first child and will be celebrating her first Mother's Day. Do you have any good gift ideas?
Ingrid's Answer:Probably taking over for her for the day, and sending her off to a spa. That would help her relax and possibly also catch up on her sleep if she's got some hours to herself. You can also make an album of your most special moments for her to pass on. The nursery rhyme you first taught her; a CD of the songs you used to sing to her.
Question:
My sister is a single mom and I want to do something special for her. Any ideas?
Ingrid's Answer:Try what I suggested above. Give her the day off. Take care of the baby or child, give her a spa treatment. Or better yet—set her up on a blind date and take care of the kids. Hopefully, that will work.
Question:
What kind of flowers are appropriate to give to my boss for Mother's Day?
Ingrid's Answer:Something that would definitely not say romantic, but would say pretty, and happy day. So, perhaps some nice tulips, or a pretty bunch of wild spring or summer flowers. If sunflowers are available in your area now for Mother's Day, then definitely that would make a nice statement. I would not do roses, to me they are more romantic still. Or perhaps a pretty plant instead of a bunch of flowers. If she likes to cook or he likes to cook, perhaps a potted herb garden in a medium pot with some cilantro, rosemary, basil, any herbs. You can often find them in your supermarket; you just transplant them into a bigger pot and keep them in the corner of your kitchen.
Question:
Ingrid, I love the how-to videos on the site, they are really helpful. Which do you think would be best to use for Mother's Day?
Ingrid's Answer:Breakfast In Bed.
Question:
I want to give favor bags to the kids at our Cinco de Mayo party. Any suggestions?
Ingrid's Answer:Fill some fun, brightly-colored bags with lots of different M&M'S® Brand Candies, SKITTLES® BRAND Bite Size Candies, any or all of the minis available. There's also the 3 MUSKETEERS® Mint Chocolate Minis. Close it with a pretty ribbon, you can add some plastic small maracas, perhaps some plastic whistles. The important part is going to be the candy.
